Jasmine continues to be the go to Chinese restaurant for the discerning Chinese family celebrations. This Lunar New Year, Chef Brandon Ng now helms the Jasmine Kitchen and offers one of the auspicious Chinese Lauriats in Manila to welcome the Year of the Wooden Dragon.

Geomancer Patrick Lim Fernandez of Yin and Yang Shop of Harmony shared his forecast for the year of the Yang Wood Dragon, giving special instructions for each zodiac animal.

ABOUT CHEF BRANDON NG

Brandon Ng, a seasoned Chinese Executive Chef, recently joined New World Makati Hotel in January 2024, bringing with him an impressive 28-year track record in the hospitality industry. His extensive experience includes notable stints at prestigious 5-star establishments such as the Mandarin Oriental Hotel Group in Hong Kong, Movenpick Hotels & Resorts, Pullman – ACCOR Hotels, The Star Casino, Westin Stamford & Le Meridien – Starwood Hotels & Resorts. Throughout his career, he has contributed his culinary expertise to various countries, including Singapore, Malaysia, Indonesia, Macau, Vietnam, Cambodia, China, the Philippines, and Australia.

Chef Brandon Ng is dedicated to continuous professional growth, evident in his academic achievements. In 2019, he successfully earned an MBA degree in Tourism & Hospitality Management, further honing his skills to provide exceptional customer service and uphold the highest standards of hospitality. His educational background also encompasses a Culinary Arts Diploma from London, UK, and the completion of an Advanced Diploma in Hospitality Management in Sydney, Australia.


LEAP INTO DRAGON’S PROSPERITY

Lo hei yu sheng
黄燜湯竹笙海鮮羹

I’m starting to love this bonding tradition of mixing the salad while tossing it high enough and wishing everyone a prosperous new year ahead. I love Jasmine’s version with vegetables, fruits, salmon sushi, and a homemade kumquat plum sauce. It was wiped out clean.

Love this winter melon soup with seafood and crabmeat, especially when it’s served piping hot.

Claypot rice, preserved meat
腊味煲仔飯

This claypot rice became everyone’s favorite, featuring smoky preserved meat and pork that can be enjoyed on its own. It pairs well with sweet and sour pork and steamed garoupa.

Roasted suckling pig
化皮乳猪件

Artfully presented in layered strips of fat, meat, and crispy skin, the meat is tender, the fat melts when you eat it, and the skin remains crispy even after some time.

The fish meat is fresh, easy to debone, and you’ll relish the subtle soy flavor of the sauce.

Stir-fried scallops, shimeji mushrooms, celery

Plump scallops, resembling large coins, are accompanied by fish roe and shimeji mushrooms.

Red auspicious sweet sour prawns, cantaloupe
哈密瓜糖醋虾

A harmonious blend of sweet and sour flavors in an auspicious red sauce, best enjoyed when paired with claypot rice.

Braised whole abalone, dried oyster, mushrooms, seasonal greens

Indulge in the opulent (and pricey) flavors of the sea, featuring abalone and oysters, symbolizing prosperity and wealth.

Sweetened red bean soup, glutinous rice balls
紅豆湯圓

Similar to bilo bilo, but with a velvety smooth red bean sauce and a mochi-like chewy ball.

Nian Gao
年糕

Locally known as tikoy, but I appreciate the significance of its Chinese name, ‘Nian Gao,’ which means getting higher year on year.


FINAL THOUGHTS

This is undeniably one of the finest Chinese Lauriats in Manila to celebrate the Dragon New Year! We relished every dish, each carrying an auspicious meaning to usher in good luck and abundance for the year ahead. Highlights include the Prosperity Salad, Claypot Rice, Roasted Suckling Pig, and Braised Whole Abalone with Dried Oyster and Mushrooms.
